too extensive menu?

hello there, I'm a line cook in a small restaurant that is suppose to be a bistro. We have 4 different menu depending on the day and the service. we are normally 2 in the kitchen on weekdays and two on the week-end in the low season. I was wondering if our menus are maybe too varied. We have 85 seat low-season and 120seat in high season, which gives us about 300 covers every shift.

The first one is the breakfast menu it has about 140 items, the week lunch menu another 120 main if we don't count the appetizers, the night menus which is about 175 items and then we have the week-end lunch menu which is about half of the week one, no table d'hôte and no appetizer.

Those menus sometimes add up because the breakfast menus finishes at 3h pm and the lunch one starts at 11h am so for about 4 hours every weekday we have a menu of about 260 mains and I was wondering is it normal to have such a wide menu or is it just us? Thanks

the menus are 6 or 7 pages each, prep does take a long time all vegetable are fresh we get the meat sous vide except sausages and bacon which comes in fresh, sea food and fish are frozen except calamari which is fresh but pre-cut, but we get the poultry and italian sausages fresh.

We bake muffins and viennoiseries, we make all sauces, cream and soups from scratch.

The appetiziers are all pre made when we get them which is why I didn't count them we just have to portion them, like the cheese curd.

We slice our own charcuterie and cheeses.

A good menu should be between 5-7 appetizers and 10-15 entrees. I think you ought to go through the menu and choose what 20 items you know sells the best in the list of 200+ and get rid of the rest. From the sounds of it, whomever is in charge doesn't know what they are doing.

Geez! Are you for real? You must be working 24/7 and then some!!!

My place is a third of the size of yours, I have three starters and 7-9 mains, soup and salad, all fresh and from scratch, and (being the only chef at the mo) I struggle sometimes...

Sounds like a nightmare.

I know the type of situation you are talking about, I worked in a place with a lunch menu, a dinner menu, a bar menu, and a taco bar. there were 12 varieies of fish and it was not even promoted as a seafood resto. There is a class of menu design who's point is to have 500 different items available, like the cheesecake factory restaurant, but it has to be set up to mix and match all the prep for the different plates so that its like the crew is prepping for 50 items not 500. - like how a mexican or pizza joint does a lot with a little, or how you can quickly bust out hundreds of menu items like soup, stew, salads and entrees out of a reach in and 4 or 6 bain-maries of mother sauce. Weather or not your boss has it set up so you are not working yer arss off I don't know, but I think not because There is NO WAY I'd be slicing my own deli in a situation like that. In a samich shop - okay, in the bistro that you have described its just stupid, its abuse of employes. How many total hours are spent slicing and cleaning the slicer? How much more does sliced meat cost? Not to mention the cost of the slicer and maintences of it, or the space it takes up. It's probably costing your boss more to work you even harder.

Weather or not the menu is too extensive depends on how smart its set up. Are you under major stress? Can you get all the prep done before service? Does service flow well with good ticket times? It can be a fun challenge or it can be pure ulser inducing hell.

I want to know more about your place. Is there a menu posted online?

As everyone suggested, you should reduce the number of items. Even customers would feel overloaded with so many items to choose from. 

I'd suggest if you really want to try how most of the recipes will be accepted, add a "special menu" or 'today only' list where you rotate some of the items. During the time you'll be able to tell what works best and what should be taken out from the menu entirely.

holy smokes! i am speechless which hardly ever happens....normal you ask?....NO...by definition, bistro means small restaurant and usually one that serves alcohol, but no matter that for the moment...it's your menu size, i don't care how many kitchens you have....the question in my mind is why? it's as if the owner put everything he ever ate or anyone who said they liked something on the menu.. god, how do you even turn over the tables in a timely manner when it takes an hour just to read the menu...i agree with petals, the menu is nauseating. restaurants need to have a 'concept', a mission statement, to be defined....i can just hear someone saying to their friends,"let's go get something ot eat at the thai, mexican, cuban, greek, peruvian, american,cajun, southwest, japanese place...oy! god, the waitstaff must pull their hair out every shift

how do you even do that menu?(sous vide? elves?) store all those ingredients and move all that food equally? it's what specials are for! how much waste do you have? where's the kitchen manager? the head chef?...if the menu is the 'brainchild' of the owner then it is up to the kitchen mgr and head chef to re educate him...sooner, rather than later.....it is later....the bottom line is does he want to make money or not.....god, i can't even imagine what the kitchen scene must be like on a busy night, or any night for that matter.......

how long has this place been in business? where is it? geez, what an incredible waste of talent, food and resources......cut,cut, cut and then cut some more! or move on......need scissors?

I have copy of the menus online but only in french, the lunch menu and the week end one have been updated on paper but not online yet.

The restaurant has been opened for 15 years but we have a different owner for the last 3 and its not going really well. He keeps adding to the menus, last week he added 20 items on the week-end menu without even asking or telling the chef... He added menus items that we do on the week when the chef is there but on the week end we don't have the time to prep for it.

Not sure what you mean by not going really well, but if the restaurant's not doing well

then the LAST thing to do is add more items to bog down the chefs, give customers

15 more minutes worth of figuring out what they want which, as Joey said, reduces

your FOH turnover by a great deal, (though you seem to be serving a lot of people as it is)

and possibly even increasing food costs.

Also agree it doesnt sound much like a Bistro, in the usual sense; mefeareth the owner

hath no clue how to run it, and mistakenly thinks when things slow down, more choices

will speed it up. Just wait til the holidays hit, and owner pops 20 or 30 new holiday items on

there. An eventual meltdown is approaching....as Agent Smith said: "It's inevitable!"

Thanks for providing more info and the link. After visiting the website and reading the other comments, I'll offer this. Print this thread out if you can and show it to the owner. Explain to him in a professional manner that some changes are in order. i.e. cutting down the menu, having a definite focus, quality over quantity, etc.

The menu is ridiculous. And from your description of buying practices, you are not working with alot of quality products or utilitzing any professional techniques. If the owner is not willing to make substantial changes, and you are seriously interested in a career as a culinary professional, you should give him your notice immediately.  If you've lasted more than a month in this environment, you should be able to make it in just about any kitchen. You deserve better.

I run a small bistro on a vineyard in Connecticut.With the shear volume of offerings at your place there is no way to support the local farming communities.

The menu should be small and focus on classic bistro fare & what is available from your local Agra-aquaculture.

Holy smokes, that looks like a catering menu.........I feel sorry for the cooks who work at a place with a menu like that.  What is the food cost at a place like that?  How much product goes bad or is thrown away?  I have to many question, which is not going to help you at all.

I say run, run, run as fast as you can from that place.
