Can someone please modify a spice cupcake recipe

Hello if you could please modify the recipe below I would be very grateful. It is a spice recipe that has raisins, walnuts and it calls for shortening. If the raisins and walnuts were omitted and instead of shortening use oil how would I replace the water to allow buttermilk as for me I find it makes cupcakes moist. The other ingredients look fine. Hopefully this modification is possible it makes 12 cupcakes. Thank you

 

1. omit raisins

2. change shortening to oil

3. instead of water allow buttermilk

4. omit walnuts

 

 

2 c water

1 c raisins

1/2 c shortening

1 c sugar

1 egg

1 3/4 c all purpose flour

3/4 t baking powder

1/2 t salt

1/2 t each ground allspice cinnamon and nutmeg

1/4 t baking soda

1/4 ground cloves 

1/4 c chopped walnuts

 

these are the directions I have

 

In a large sauce pan bring water and raisins to a boil. reduce heat simmer for 10 mins. remove from heat and cool (do not drain)

in large bowl cream shortening and sugar until light and fluffy. beat in egg stir in raisins combine dry ingredients  add to creamed mixture until blended stir in walnuts bake at 350 for 20 - 25 min

I would reduce the baking powder to 1/4 tsp to accommodate the acid in the buttermilk. I would also reduce oil to 1/3 cup but be aware that it will not cream with the sugar so the texture could be more of a muffin than a cupcake.

If you don't want to use shortening use whipped butter.
