I think I'm in trouble - please help

I forgot to add garlic into the pork belly marinate (It has star anise, rock salt, rosemary, garlic and black peppercorns) I dont even know if you call this a marinate... but you know at work, we salt the pork belly overnight. I did that today but forgot to add the sliced garlic. Should I call up my boss tomorrow? I'd text her but I don't have her mobile.

Everyone makes mistakes.

In the long run, it is better to fess up as soon as you realize you have made one.

Don't worry about it great discoveries have been made by similar mistakes. Puff pastry it has been said was discovered by an apprentice who forgot to put in the butter for the dough he was making so he rolled it in. 

 

Just tell your chef everyone makes mistakes.

I called at 9:15PM on the Monday night (I work at that place on Mondays) and all the chefs were home by then. I left a message with one of the waitstaff who was also the manager, she thought that I was funny. I actually panicked before hand.

Ditto, the fact that you care enough to be concerned about a mistake shows a lot about your character. I'd let you work on my line any day. Making mistakes is a healthy part of any learning process, the flaws start showing up only when you aren't honest about your mistakes. You did the right thing.
