Hey all,

 

Was wondering if any of you had a recipe for a good cookie or cupcake that is vegan friendly.  Just found out this morning that I need to bake for a family function this Sunday - vegan and nut free.  Any suggestions?  

 

I have several good cookie recipes - if I omitted the eggs from them how do you think they would turn out?  (have never tried).  I primarily do cupcakes, however, wondering about the consistency/density if I leave out the eggs and use soy milk instead of buttermilk.  I've tried buttercream frosting using margarine to substitute the butter but didn't find the results very favorable.

 

Does anyone have a recipe or can point me in the direction of one where the taste isn't compromised.  Only have a couple of days to come together with something   frown.gif
