Easy consomme question!

I'm embarassed to ask this one...but really am not sure! :lol:

I've got some consomme going on the stove right now. I've never done this at home, only at school....so I've always had the advantage of a stock pot wiht a spigot.

Without a spigot, is there a secret to straining without breaking the raft or is it just a matter of ladling carefully??

I know this is really a big "duh" but thanks for the help! :D

Ziggy, you need to gently lift a portion of your raft with a laddle to reach your consommé. Just reach in with your laddle and disturb the raft as little as possible. When you reach the bottom, ask for some help: one of you can tip the pot over while the other holds the raft in place.

Thanks Anneke! I'll try that...it's looking nice, would hate to ruin it now!

Of courese I'm home alone since hubby's at work....so I'll either have to lose some or get one of the dogs to help me pour the last bit out! :lol:

If you're worried about accidentally shattering your raft when you get to the bottom and are pouring it out, just strain it out in a separate container, just in case...

Whatever you do, use lots and lots of damp cheescloth.
