Hello...ahh I'm Will from Ottawa Ontario. New here..as you can figure out by this post in the introduction sections..soo i guess that last sentence was pointless.
I'm a Sous Chef, at a well known establishment in the byward market. To be honest I have zero culinary formal education, 10 years in the industry,worked my up through being the go to line cook, impressed the right people and got promoted about a yr ago. Im here to absorb information and maybe offer my .2 cents where every possible. Im really interested in learning more about the business aspect, since in my job im to busy with daily operations,to pick my chefs brain about decimal points.
