Pasatelli is peasant food. Simple, made with leftovers and extra bits. A dumpling of breadcrumbs, cheese and egg in chicken stock.

 

Yet in the modern world, this dish is only worth making if you've made your own chicken stock; if you've got real Parmigiano. Otherwise there's just no point to it. There is so little to this dish that the quality of the ingredients is paramount.

 

What was a dish of poverty in the past is now a dish of extra work and quality.

 

And it was worth it too.
