Need a Recipe Idea

We have a potluck holiday breakfast at work next Wednesday, and I'm trying to think of something interesting to make... I also have an hour and a half commute, so I need something that I can either warm up in a crockpot or electric skillet, or something that could be served cold.

I do remember seeing a Julia Child recipe a while ago for apples and sauce between layers of crepes, so I'm considering doing a desert...

Any ideas you all have would be great!

Are those sveeedish meatballs in da crock? It would help if you told us where you are..Norway or USA and if you have a budget.

Here is a link for a Maple Glazed Apple Tart - 

 

It is quite easy to put together and will hold for several hours.  The best part is that it looks more complicated than it is and tastes great.

And are you commuting in your own car, where you can place a dish on the seat or floor or are you at risk of being crushed on a train or bus?

 

Being restricted to public transportation has radically changed what I bring to pot luck affairs.

For a pot luck I'd make a rice salad. 

 

- Cook the rice and let it cool by laying on a sheet pan. 

- Combine it with a can of black beans (drained)

- add chopped green/red/yellow peppers

- boil a bag of frozen corn then let it cool and add it too

- add chopped scallion and fresh parsley

- Make a dressing with olive oil, lemon juice, vinegar, toasted ground cumin seeds, oregano and salt/pepper and dress it right away.  It gets tastier as it sits.

 

The trick with a salad like this is to make sure to cut your vegetables/peppers the same size as the corn kernels and beans.  To transport I would take a cooler.  Cheap, easy, very filling, very colorful and really tasty.
