Today I finished my french macarons for my party tomorrow... the filling is coconut and ginger ganache..

Nice,very nice ! Ginger Ganache sounds exotic. Did you use dry ginger or fresh ginger in your ganache ?

I feel I shoud try to make it myself.

I used fresh ginger that I shredded. Coconut was coconut milk not flakes. Thank u

Those look so perfect!  I failed 3 times and have not had the nerve to try again.  Did you make your own almond flour or buy the almond meal and use a food procesesor to make it more finer?  My batter was too runny and spread into a giant blob.  I even aged my 3 eggs white overnight.. what am I doing wrong?

Thank u. Drying times really depends on the humidity. If it is runny then it was mixed too long. I buy Bobs REd Mill almond flour then I put it in the processor together with the powdered sugar.
