les amis d'escoffier society dinner guidelines?

Hey everyone

 

i hope someone can help me out. i go to J&W and as part of our cost control and menu planning class we have to build a 5 course menu, using the "les amis d'escoffier society dinner" guidelines.

my chef (who is a d`escoffier member) is being no help at all, i have researched the internet but have found nothing.

 

does anyone have any idea how those meals are supposed to be assembled? is there something specific that is not allowed to be used?

i am completely lost.

 

any information would be helpful.

Just contact the socity directly. IIR they have several chapters. Clearly your Chef wants you to use the best tool you have (the mushy one between our ears) and do some research . ;)

They are almost like Chaine'' Rottisseur dinners really nice , even cigars after dinner with brandy and cordials. They are in NY contact  The philentrphic Les Amis dEsscoffier. They are a charitable org so maybe look under charities.

Could go right to the source and ask Escoffier him self:

Or Escoffier's nephew, who I believe is involved with this book:  http://www.wiley.com/WileyCDA/WileyTitle/productCd-EHEP000481.html , might have some insight.

yes.. thank you Duck.. i did not think of contacting the actual society. i checked their website but there was nothing there.

i do hope they will be willing to give the information.
