Gas Hot Plate Help

Hi.  Need help with this.   I think I asked this question in the wrong forum earlier.

 

I'm wanting to replace an electric (208V) hot plate with gas.  I badly need it to be able to slow simmer as well as normal cooking, and be as accurate as possible regarding the knob settings.

 

I've seen references to dual burner setups, and I assume this is for lower heat.  Is this true?

 

Do any of you know if there is a hotplate which will do both?  I would really appreciate any information regarding brand, type, etc.
