I get these great vanilla pods from an incredible source from Belgium because I work in a chocolate factory. I was experimenting with making some extract but I don't want to use alcohol. How else can I use these great vanilla pods to make vanilla extract and/or essence?

What do you think is a good ratio of water : sugar : vanilla bean? I want it to have the potency of an actual extract.
What temp do you think I should take the simple syrup to so it can have a consistency I can work with?
