Please forgive my lack of knowledge....I have jumped on the band wagon for grinding and making my own bread. Today I stocked up at my local bulk store. I got cracked wheat kernels thinking I could grind this into whole wheat flour. I started following a recipe from Peter Reinhart's The Bread Baker's Apprentice for whole wheat flour, using a soaker and a poolish from the cracked wheat kernels ground up.
Now my question - is cracked wheat ground up whole wheat flour? Will my bread turn out?
