Tortilla salad bowl sources

Do any of you guys have any sources for prepared tortilla salad bowls (you know the ones that people use for taco salads, etc.) The limitations of the kitchen and staff is making me think of using a time saver instead of making our own. Any companies, web sites that are out there for this?

You can deep fry those yourself with a basket mold. Done fresh, they are great. I do remember seeing already-made bowls in a supermarket (City Market big in the west...not a national chain) but they'd probably have to be flash fried to crisp up.

Do you have a wholesaler? If your wholesaler caters to any Mexican Restaurants, ask if they stock these. If not, seek out a wholesaler who does cater to Mex restaurants.

There is a piece of equipment out there that makes making tortilla bowls very easy. check with your Sysco rep. It kind of looks like a big metal plunger with a larger cylindrical base. You throw your tortilla into the deep fryer and plunge this thing down on top of it forming the bowl. Unless you sell tons of these a day, it is quick work to make enough for service.

A #10 can and a pair of tongs. Lay 12 in. tortilla in fryer and
plung the can in the middle of tortilla. This method works well
and you can prep several before the shift and they also stack well.

Ah, here's the thing...no fryer in the kitchen. We are using our own oil in a pot, which, as you can imagine is sort of a pain in the butt. The people who come to the cafeteria do like and ask for this item...

Thats rough but same method just smaller size tortilla.All you need is about 4 in. of oil just enough to cook you shell.Make sure you test your pot to make sure you don't overflow.
