Fish and Chicken Restaurant - Chicago style

We want to open a Fish and Chicken Restaurant in GA with a menu similar to:

Like to ask what kind of fish to buy and serve.  I have tried Sharks catfish, tilapia and grouper.

The catfish taste like average catfish, tilapia taste like catfish and grouper taste like mild white fish.

 

Should we use frozen or fresh fish and from what supplier.  Any suggestions are welcomed.

Frozen north atlantic cod or halibut would be good. Also if you can 'Tare' chickens which are chickens that are missing a wing or a leg or skin is cut  they are normally cheaper.  Good Luck

 

Don't know what Chicago style is I am from New York and Floride
