Need help with figuring out what to do with an Italian dinner

I'm new to this website and I hope I'm posting in the right place. I got an idea to wrap some chicken up in lasagna noodles and top it with some cheese and home-made sauce. My problem is that I want to do more with/to it but have no clue what. I'm sure there's a recipe for this out there somewhere, but I love just doing my own thing with dinner so I was wondering if I could get some suggestions. Thanks in advance

Hi ChefJT.  It all starts with an idea doesn't it?  I love making individual rolled up lasagnas like you mentioned.  I start off by parboiling the lasagna, just enough so that they are pliable.  I make a stuffing made out of ricotta cheese, frozen spinach (thawed and squeeze out the moisture), chopped scallion, parmesan cheese.  You can put anything in there really. 

 

Prep small tenders of chicken by par grilling them until they have nice char marks but not cooked all the way through. 

 

Lay out some marinara to cover the bottom of your baking dish.  Then spread the ricotta mixture on a lasagna sheet, place a small piece of chicken on it and roll it up.  Place it in the baking dish.  Continue doing this until your dish is full.  Dot with mozzarella chunks and ladle more marinara sauce over it.  Sprinkle with parmesan cheese and breadcrumbs.  Bake until bubbly and golden.

Before wrapping with lasagna you may cut a pocket in chicken breast a fill them with goat cheese and spinach like here.
