I just made a wonderful roasted root vegetable soup, and decided to put some celeriac in it.  The soup was great, but had a little unexpected sweetness to it...was this due to the celery root?  does it have a lot of sugar?  How else can it be used?

Celeriac may be the ugliest vegetable in the world, but it is actually quite versatile and one of the tastiest winter vegetables.

 

It does add some sweetness, especially when roasted. I always use it in my mirepoix instead of the rather more insipid celery, and it's great in mash (2/3 floury potato, 1/3 celeriac). Also try a cream of root veg soup with carrots, swedes, potatoes and lots of celeriac. Very "upmarket"!

Possibly.  What else was in the soup?  What was your seasoning? Roasting does bring out sweetness in vegetables.  I find that if I put too many carrots in my stock bases the soup turns out unpleasantly sweet.
