Boil and drain black beans. The mash it up or puree it. In a big bowl put in plain flour, the black beans, a pinch of salt and mix it well. Make a well in the centre and put 2 beaten eggs in the middle. Gradually combine the dry ingredients with the egg starting from the middle working your way out. When this forms a dough, knead it until pliable. Roll out with a rolling pin on a floured surface until 1/2 cm thick. Using a sharp knife cut it into small strips and cook it in a wok or pan of boiling salted water with some olive oil to prevent it sticking. When noodles float up to the top drain it in a colander in an empty sink. Whoa la its done.
