I'm looking for a good recipe for bread to slice and use in grilled cheese. I make brioche buns for hamburgers for the restaurant but as loaves for grilled cheeses, the crumb is too delicate. You can't butter the bread. I am looking for a bread recipe with a firmer/denser crumb that can be sliced and spread with butter. I use fresh yeast so a recipe using fresh yeast would be preferable. Any type of bread will do, I'm open to any suggestions. Also I only have a 5-qt KitchenAid so recipe that yields 2-3 loaves would be best.
