We just popped for an Amadore GE convection oven. Will the be any improved quality in my food from the use this alternative heating method. I know cookies wont burn on the edges as easily but will anything else change?

What kind of convection oven are you using? Mine is a Blodgett, and you can't turn off the fan (at least I don't see any way to do it). It has a single fan more or less centered at the back of the oven.
I've been thinking for years how nice it would be to be able to use is as a conventional oven, particularly for things like egg custard pie, baking, etc. some of which catch hell with the convection. I've even tried putting things inside a deep pan to ward off the air flow with very limited (un)success.
My thinking has been that the reason you can't turn it off may be that some wires would burn or something without the airflow. Don't know.
I'm happy with it. It's got two fans circulating the air, but I can turn them off. I can even turn them on while leaving the oven off if I need to dehydrate stuff (which I've never done).
It makes sense that you haven't heard of American Range, as these things happen to be regional and American is located in Pacoima. Last I heard California is not in Japan.
American makes pro equipment, and high-end commercial look, residential stuff as well -- like Wolf or Viking but less expensive and better. If FF is using residential equipment, the comparison to Blodgett, South Bend and Vulcan is apples and oranges.
Got an LG convection oven 'cause it was marked down half of nearest residential competitors, price tag obviously turned off my thinking, I'm finding out that any of their appliances with heaters have problems in that area. Anyway it does have 2 fan operation modes. On roast the fan goes continuous, on bake it is intermitant. Has automatic 25deg reduction on convection. It is not entirely even in roast or bake mode, don't know how it would do a creme brulee, but otherwise scads better than ordinary residential conduction oven and I use it 100% convection accept at temps below 300 (275 actual), as the convection setting will not go lower.
American are comparatively astronomical in price, curious if anything closer to the GE/Westinghouse end of things might be recomended?
Read my post, I never said American was made in Japan. , I said" I never heard of it" nor do I know where they are made. I then said said the brands made in Japan are worthless. You can keep Wolf commercial to they will fall apart in 4 to 5 years (Burn Out) Residential is different outfit.
