Hello everyone, I'm Cristal aka blackened1339. I'm an occasional lurker that finally joined this forum. I'm from upstate NY. I've been in the business for close to 10 years, working the line for 5. Very recently, I took a sauté position at a new establishment that does about 700 covers a night. This ain't my first rodeo but it may choose to be my most challenging job yet :-) I look forward to meeting new and interesting people here.

Welcome, Aloha Cristal to Chef Talk.

Holy Mashed Potatoes Batman, that's a lotta' covers for ONE NIGHT!

You go girl!

So glad you're here and not just lurking in the corner, join in wherever you find interest.

Upstate NY?  My BIL is from Pleasant Valley, beautiful.

So you know the drill here, you might want to use the search bar at the top of the page, as many points have gone around the globe many times, nothing worse than hearing a broken record.

If you have a question, PM one of us Mods or an Admin, everyone has respect for each other.

Enjoy!

Thats a good amount of covers  for a night. How many people work the line?  What type of menu? Place must be making a load of $$$ with  those numbers.

Thanks, Mod and Eaddy83! Ed,We have a total of 4 whittled down from 6+ at opening. 2 fry, one sauté, one grill. Our food runners and expo also have their own responsibilities which takes some of the workload off of us. Luckily, we are pretty well organized to be able to do that many between us. The food is good and from scratch but not overly complicated so I'm sure that helps. I have certainly worked places that did fewer covers but required more staff given the more complicated nature of the menu items.
The $, eh, it could always be better, lol, but it's not too bad and we're only open Thursday through Sunday currently. I moonlight at a popular bar the other days of the week.
