Serving cured salmon.

Hello everyone! 

 

I work at a casual seafood restaurant in Minneapolis. Skuna salmon brough some of their fresh salmon by to show us as we were looking for a sustainable, exceptional salmon for the menu. I we had a lot of left over and I have about 2 lbs of their fantastic salmon in my fridge. I decided to cure it with Sea salt, sugar, peppercorns, Lemon and Cilantro. 

 

Now my dilemma here is what to serve this with once it is finished. It will be used as a finger food and I was looking for some good ideas. I was thinking of toasting some crustinis, and serving the salmon topped with brunoise tomatoes, fresh cilantro and some thin sliced, marinated Red Potatoes. Wondering if perhaps there were any other suggestions. I am trying to stay in the single serving portion state of mind here. Thanks everyone!!!

Personally I think your ideas so far sound very good. 

 

I would also consider serving the cured salmon on top of small blinis - or even potato pancakes.

Every now and again I do a tea cured salmon using dark, smoky lapsang souchang tea.  A chipotle aioli, on the mild side,  works well with it.
