I made my hubby's favorite meal last night, channa masala. Basically it's chickpeas with a tomato, onion and ginger/garlic paste base. I also made some poori (fried flatbread) to go with. Very yummy!

Well my hubby is south indian and vegetarian so I find I make a lot of indian dishes. At first I was very intimidated because all the indian dishes I looked at had so many spices, steps and just seemed so intricate that I was afraid to even try. Then I found a book called "Easy Indian Food" and I was able to find some that I could do. He's thrilled because he never thought I'd make a meal like that. Now I switch it up with anything vegetarian so we don't get bored.
