sweet puff pastry

Thread Starter

I am trying to make a persian pastry which basically is  a sweet puff pastry. I have made puff pastry many times and have no problem but the two times I added  some powder sugar to the puff dough to give it a hint of sweetness , the dough would not rise as usual.

Am I doing anything wrong or I am not supposed to add sugar  to the dough at all. any help would be appreciated.

dust it or glaze it after you have cooked the regular puff pastry. I wouldn't bother trying to add sweetness to the dough

Thank you for your reply! It is so frustrating when I have eaten the sweet pastry but can't think of how to incorporate the sugar without affecting the rise of the pastry. : )

Sprinkle each side of the pastry before baking it with sugar and sandwich thge pastry inbetewwn two sheetpans with parchment paper, the sugar will carmalize nicely while baking.
