Hello, I'm trying to make a wasabi flavored filling that I can stuff inside dates, then roll the date like a cigar, then dip it the date in tempered chocolate. I would imagine this wasabi filling would be a bit on the confectionary side that can be used for pastries and sweets. Any ideas?
Wasabi and Pastry???
I've made something similar with Wasabi filled dates wrapped in bacon and grilled.
Since you are dipping them in chocolate, and they are in and of themselves sweet, I don't think your filling needs be as well.
The first thing that comes to mind is simply a paste made from water and the powder. If you wish, you could add honey for sweetness.
A Wasabi buttercream would also lend itself to what you are doing.
