I have made a recipe for nacho cheese but I am looking for other ideas.
What is the best recipe for nacho cheese?
ChefTalk.com Top Picks
Straight from J. Kenji Lopez-Alt
8 ounces of sharp cheddar cheese (not pre-grated)
1 tbs corn starch
1 (12 ounce) can of evaporated milk
2 tsp Franks Hot sauce
Grate the cheese and toss with the corn starch.
Combine cheese and 1 cup evaporated milk and Franks hot sauce in sauce pan, cook over low heat stirring constantly.
Once heated and cheese is fully blended you can thin it to your desired consistency and adjust heat level.
Serve immediately or hold in small crock-pot or low chafer. Cover with parchment to avoid cheese skin.
Thats great! I have been working on a recipe in my food science class. I basically picked up an easy recipe and modified it a bit.
1 tbsp flour
1 tbsp butter
1 cup of milk
1 cup shredded cheese
4 slices of processed cheese
1/2 tsp of salt
A dash of vinegar
A dash of heavy cream
This was after a few weeks of experimenting with the recipe but its much better with these modification.
I have also been designing a website for my one of my classes for restaurant ownership.
PM me for the link
try the even simpler one above and modify it.... less stuff = more cheese flavour
