Dairy free sole with coconut milk?

Hi!

 

I am new here and am having some trouble in the kitchen. I have sole and want to bake it with some kind of dairy-free cream sauce. Here are my issues: 1) We ran out of gas, so I cannot use the stovetop. I can only use the oven. 2) I really want to keep this dairy-free and 3) I do not cook with margarine. So, can anyone help me to make a good, creamy, coconut milk sole that is baked? I was thinking some coconut milk, garlic, salt, pepper, red pepper, curry powder... Anything else? Does this sound good or gross? Remember, I can't do anything on the stove :( Thanks!

Put a little bit of oil in an ovenproof dish and add a quarter cup of water, crushed garlic.  Squeeze some lemon and bake it.  When it's done add a little coconut milk to the liquid.  Sprinkle with curry powder, salt and pepper to serve.

Some ideas, use some or all:

Lime juice

Palm sugar

Lemongrass

Rice powder (just grind some Jasmine rice in your coffee grinder)

Shallots

Turmeric

Fish sauce/Soy sauce

Ground coriander

Chili

Cilantro

Scallions

Ginger

 

Wrap the whole thing in a Banana leave and steam.
