So chefs what are your thoughts on the tasting menu for days like valentines or new years eve and such.are tasting menus mandatory to keep up with the joneses or do you prefer to just rock out your normal menu?this being my first Valentines day i made a tasting menu albeit last a restaurant trying to gain some consistency i think im taking a risk by making this menu as we are still trying to prefect and train guys on the normal menu.but i felt like it was a neccassary risk that i have to take.with the hope being that if it works out well it will help establish our restaurant as players in the area and maybe start to get a little small buzz behind my name as well in the local area..
