convection ovens

I have heard that there are some types or brands of commercial convection ovens that do not require hoods or ventilation. Does anyone know which type or brand this would be? I am looking to acquire full size oven. I am in Oregon and am trying to not spend a lot of money on hoods and fans setting up new bakery kitchen in rented space. Thanks any help will be so appreciated.

First step would be to check with your local fire marshal and find out what ovens are certified for hoodless installation in your area.

As what Pete said above.

 

In my area, electric convections don't require a hood or fire supression.  However each municipality has different rules
