Hello from the gutter!

Hi all, stumbled onto this site by accident while I was researching sources for slab bacon, of all things. Lil about me...Former police officer (retired early due to disability), Motorcycle rider, serious foodie (well...not *too* serious), homebrewer, Husband 19 years and dad to 2 boys (If wife asks, I listed that first).

Discovered food late in life, when I quit smoking at 34 (2005), and realized not only how much I enjoyed all the various flavors, but also how cooking kept my mind off cigs, while at the same time satisfying my "tinkering" habit.  Gotten to the point where I have one or two dishes memorized, biggest one for me was figuring out how to recreate my Italian mothers Carbonara (she passed when I was 16...if I knew then what I know now, I would've paid more attention to the "family recipes"...they died when she did....generations of Sicilian masterpieces gone.  :(

I'll probably lurk more than anything....have many old posts to browse, no real info to offer to anyone...but I figured I'd get the intro out of the way. :)

Aloha, Welcome Thor to Chef Talk.

First off, I want to thank you for your service to your community; it takes a special person to be able to be a Peace Officer.

Philly guy, huh?  My hubby is too.

I think that you’ll be surprised after awhile, how much you can add to the conversation.  I was just like you about 2 years ago, just Google-ing, looking for an answer to a question and BAM!

Please take a moment to go over the tutorials, FAQ and community guidelines; if you have questions in regards to the site, just PM one of us Mods.

Ya neva’ know, you might be chatting and share recipes with another member who’s in Italy!

Kaneo - Mahalo! both for your welcome, and your appreciation (sorry, that and aloha is all I have).

I've been on here pretty steady the past two days, I really like it....all the info without the fluff, which is right up my alley. And in the small chance I stumble upon a thread I can contribute to, I'll be more than happy to help :)
