Breading or Coating

I am having problems with getting a good coating on my fish and chicken when trying to do a breading type coating and wondering if there are any tricks or tips you can provide.

 

I usually do an egg wash and then into my coatings for frying or most baking or sometimes depending on the protein I will just coat in some olive oil and then dredge.

Protein into seasoned flour - egg wash - bread crumbs / coating

 

... sometimes you can double up on this ie.  flour - egg wash - coating - egg wash - coating again.

 

the main key is you need to have something 'glue' the eggs and coating to the protein, usually this is seasoned flour.
