Hi Everyone !

I am from NewOrleans and have been cooking for fun and amateur competitions for 30 years. (Am I that old???)
I have decided to try my hand at a small crepe business. Some of this is overwhelming but I love new experiences. Plus it's nice to do what you love for a change. Anyway any and all pointers are always greatly appreciated. I have already learned a great deal as a lurker on this forum. Thanks to all.

Aloha!  Welcome to Chef Talk, Congratulations!  That is a huge accomplishment to start your own business.  I think that you will find loads of advice, chat and share with others in the same boat as you, what with 45,000 + members...  You might want to check out Cheftalk.com on Facebook as well.

Let's not forget about the Home Cook, we've got plenty to bring to the table too.

From your post it sounds as if you have already started your business. Congratulations.  My advice is that you should first get a separate sales tax account if you don't already have one. The bank you use now will help you set it up. Then when you make the usual deposit, you also make a sales tax deposit. This way the money will be ready on the day it is due and should anything happen to you or your business, the money can only be accessed by the tax department. 

It is not good business practice to lump sales tax in with the rest of the receipts. When the sales tax comes due, you will have to have it ready without delay.
