Freezing Lasagna for a future event.

I will be providing lasagna for an upcoming event, and have plans to freeze it in advance. I would appreciate your advice on the best way to go about this, having never 'catered' an event before. I don't like the idea of freezing food, but am trying to cater my own wedding, or at least lower the cost of the catering. I will probably make @ 6-7 lasagna dishes. I humbly await your advice!!! Is there another dish you would recommend to freeze in advance?

I would suggest you assemble the lasagna with your meat sauce and bechamel and pre-cooked pasta sheets, then freeze it like that. Transfer from freezer to fridge 24 hours before baking, and bake at the last minute.

Would you recommend hot water soaking the noodles, and letting it bake with the lasagna at cooking time?

I would cook the noodles all the way (al dente), assemble, and freeze the whole thing.  Then, when the time comes, make sure the lasagna is completely thawed and bake like fresh.  There may be some slight depreciation in texture, but alas, 'tis the nature freezing.
