I've always found that the best knife is the one that fits your hand the best. I have several knives which range from Henkle to Forshner to Victronox but my favorite, go-to knife is a 8" Chicago Cutlery chef knife. It's not pretty and carries no "wow" power but it's perfect for my hand and very comfortable chopping fine or course. Even after a lot of prep, my hand doesn't get tired like many other knives I've used. All the bells and whistles and cool names or high price tags don't matter a bit if your hand cramps up after 10 minutes. Go for what fits you best.
