what would be causing fat or sugar blooms on my cakes after I freeze them

I am assuming you mean the icing on the cake is blooming, right?

Foodpump is the expert on all things chocolate and if he is not too busy with his dancing girls (Easter Bunnies, lol) may have the time to answer a PM.

Include the recipe that is causing the trouble and also note how you stored it in the freezer.

I have googled and found lots of info, but nothing specific to your problem (that is easy enough to understand, lol)
