If using uncooked butter in a dessert, does it need to be refrigerated?

I have a confection that calls for confectioner's sugar, peanut butter and butter. What I need to know is do i need to refrigerate it? If not, how long can i keep it unrefrigerated for?  If it is refrigerated, how long would it be safe to eat? If I need to go the stabilizer route, what stabilizer would I use?

 

I'm new to Chef Talk and hope I'm not asking too many questions. Thanks for your help.

What exactly is this confection? Is it just a mixture of the confectioners sugar, peanut butter, and butter and thats it? If so, I'd be inclined to say referigerate it, but its hard telling without details of how its put together and finished off. Are these components that go into a ganache?

Yes, it's a mixture of those 3 ingredients plus crumbs to bind it. I then top it with chocolate. There's no cooking.

As you can see you haven't gotten many responses even though everyone has an opinion, I suspect because this topic is a bit controversial. Some people live in the "Butter is a dairy product and must always be refrigerated" camp, I happen to reside on the other side of the line.

 

Even in south Louisiana where it gets super hot people leave butter out on the counter for as long as it lasts before it's eaten, sometimes weeks, and I've never seen it go bad.

 

At home I always have a stick of butter sitting on a dish ready to be spread and I still haven't seen it turn.

 

All of this is to say that in my opinion your Buckeye (or whatever it is that you are making) will be delicious unrefrigerated, especially with the powdered sugar to help preserve it, indefinitely.

Butter does go rancid. But the sugar helps it last longer
