Gungasim's chili

.ya got chile De Arbol, Ancho, Chipotle, Pasilla, Morita, Guajillo, some dried red hot cherries, and some dried hot Thai......





Broke them open, shook out most, but not all of the seeds. 5 minutes in the food processor, and..............







That goes in a glass sealed jar, and enough high quality chile powder for a couple months.


About a pound and a half of shoulder chuck steak and about a pound of cube steak.....





Trimmed and chunked up....





The "marinade" ingredients.




The meat gets tossed with the above, and parked in the fridge for a few hours..






Gets diced up to this.




A bit over a pound of ground beef



Gets browned off and fat drained......



A bit of olive oil, and the marinaded beef chunks get seared/browned in batches......




That gets transferred to a bowl to hold, and then the onions and peppers get stir-fried.



The home-made chile powder gets pan roasted for a couple minutes.



Then the beef and veggies go in the pot with more cumin and a splash of red wine. The "canned' ingredients.............




Everything in the pot, and it gets simmered for a couple hours.








Dinnertime, some diced raw onions, some grated extra sharp white cheddar, some sour cream, some crusty bread with butter......yum..

Definitely will produce the Summer, Fall, Winter or Spring wind....

Nice chili indeed.  The mix of chiles is superb.

Thank you Ordo.  I am planning a trip to your country in 2014- 1 week spent chasing trout in the mountains; 1 week chasing sea runs in Tierra del Feugo.  I am also looking forward to some terrific wine and asado...... Can't wait-  I have been saving for it for 9 years now- almost there.

Not so. He's responsible for the musical posts. A fine legacy indeed, but step by step posts are much older than Mr. gunga.

Of course I agree, but gunga seemed to have set that as a standard approach here, where before in my years of watching the food discussion thread I rarely saw a photo and if there was one it was usually a finished product.

I understand. I dont go into the other forums, so I never saw your posts in recipes Ordo. I didnt mean to take anything away from your posts, they are wonderful. I just made an observation in this tiny part of the forum where I hang out. I went off the island once.. But I got a verbal warning! So I keep my happy ass on this tiny slice of food heaven, so be advised I may have forum  tunnel vision. =)
