cookie method books

Hello,

 

I was wondering if anyone can recommend a book on proper baking techniques? particularly cookies.I was told they are too tough and I overmix. Plus I am not sifting enough. Also told liquids should be incorporated in thirds. I would love to read about the methods of cooking making if there are books that provide the info.

If you have The Joy of Cooking, there is an extensive chapter on making cookies which includes a lot of tips on successfully baking cookies. 

 

The Gourmet Cookie Book includes a lot of recipe notes with each recipe which would be applicable to other, similar recipes and has a couple pages of general tips at the beginning of the book.
