Sauternes and Food

The sauternes I purchased during the 70's are now maturing.  A 1967 Chateau Guiraud, for example.  So what foods should this whiskey colored sweetness be paired with?

Best and I'm a foodie.   I know very little but the little that I know I want to know very well.

In summer... poached fruit, fruit pies, and so on.  If you're into savories, you might also think about barbecued ham, fried chicken, and just about anything salty.  Spicy sometimes works.   

 

When it cools down a little, the foie gras pairing -- especially if the foie gras plate includes some sort of fruit -- is as good as it gets. 

 

It's 105F at quarter to 7 in the PM here, and hard to think about anything as rich as foie gras.

I'm certain that I can find a flavorful combination that fits in with the local weather that screams in at 100F and 99% relative humidity!   smile.gif
