Ggreat to find you all.

Hi folks. I am looking forward to poking around here. I have been cooking most of my life. doing more than I realized I was. I recently learned to make Soufflé. All the talk of French Mother sauces intimidated me like MAD, though I AM a very good cook and can usually make nearly anything. well, I finally worked up my NERVE and investigated to learn what eat of the "mother Sauce" were. Heavens to murgatroid! I have been making Béchamel since I was 4 years old! I called it White Sausage Gravy! Well, needless to say, my fear of the Mother Sauces is now gone. and, once I realized this, and overcame that D'OH! moment, I have happily zipped through soufflé, since<G>. I usually learn new dishes just because I see them, read about them, hear about them and just decide, "wonder how ya do that?"  My family then has to endure the results. usually pretty well<G>

Welcome, Karon! It's been a busy weekend, so I apologize for the delay in welcoming you to Chef Talk. It looks like you feel at home, and I'm very glad to see that. smile.gif

 

Your experience with the sauce béchamel is similar to mine. I hadn't been making it since age four, but I also had a lot of basic skills when I came here but wasn't sure how I'd fit into the community. I was delighted to find my abilities as a home cook would be acknowledged. It didn't matter that I'd learned them from my mom and not in culinary school. That's the beauty of Chef Talk: what you know is more important than where you learned it. The knowledgeable home cook who can turn (for example) out well-made puff pastry- even if s/he didn't realize that's what s/he's been making all those years!- gets the same respect as the person who got formal training. 

 

I hope you'll explore the site beyond the forums, and take a look at the cooking articles, product reviews, photo galleries and all the great features here. We look forward to your participation here and hope you enjoy learning and sharing here for a long time to come.

Yes, I am jumping in and asking a ton of questions<G> I'll calm down soon, I'm sure<G>  This IS a great place! I don't really HAVE anyone to talk cooking with. as I mentioned, My husband isn't exactly a gourmand so I cook mostly for my own satisfaction<G> it is marvelous to find someone else who even knows the difference between a meringue and a scrambled egg<G>  Seriously, I don't think my husband DOES!!  Anyway, it IS fun and I AM enjoying it! I really feel like a kid in a candy store! I just want to explore every thing, ask everything and discuss everything at once!  I WILL try to slow down. But, it IS great fun! and nice to find kindred minds! all of my cooking contact up till now has been one sided. watching TV, reading books or looking up recipes. two way conversations about cooking are unusual for me so this is great!

 

I hope that, in some way, I can offer something to the group. Thanks a lot!
