Hi folks. I am looking forward to poking around here. I have been cooking most of my life. doing more than I realized I was. I recently learned to make Soufflé. All the talk of French Mother sauces intimidated me like MAD, though I AM a very good cook and can usually make nearly anything. well, I finally worked up my NERVE and investigated to learn what eat of the "mother Sauce" were. Heavens to murgatroid! I have been making Béchamel since I was 4 years old! I called it White Sausage Gravy! Well, needless to say, my fear of the Mother Sauces is now gone. and, once I realized this, and overcame that D'OH! moment, I have happily zipped through soufflé, since<G>. I usually learn new dishes just because I see them, read about them, hear about them and just decide, "wonder how ya do that?" My family then has to endure the results. usually pretty well<G>
