Are you talking about FOH errors that require compensation to the consumer?
Are you talking about FOH errors that result in penalties to the servers?
A percent of sales infers that something will always happen in a consistent manner. If you are talking FOH errors, they should only occur once, if at all, and, to me, are a direct reflection on inadequate training.
