How much food to prepare for Open House and Refreeze?

Hi, I have recently started a home-based bakery.  I live in the country, a couple of miles between a city (pop. 245,000) and a small town (pop. 2,000).   I am holding an open house for the first time and am unsure of how much food I should prepare.  I am running an ad in the newspaper that covers the whole county and have done advertising to neighbors/friends/businesses/Facebook.  I bake cookies, pies, bread, cinnamon rolls, bundt and loaf cakes and some other finger food treats.  Also, I plan to make food ahead and freeze it.  Can I refreeze it if it doesn't sell?  Hopefully, someone out there can shed some light on this.  Thanks so much!

Impossible to really answer this question. To many factors to consider. Ans be careful about refreezing foods.

Take preorders with deposit or full payment in advance.

Make a deal with friends/family...whomever...... that whatever you're left with you will sell at a discounted price.....
