going crazy with everyones dietery needs

It seems to me the rise in customers dietery needs has gone through the roof and its all last second. last night we had a banquet with 12 guests having a issue with something and not letting us know until the plate was in front of them gluten free, vegan, lactose intolorant , no cheese, peanuts yada yada yada hard to deal withy while your still plating up to have waiters coming back with plates with dietery issues. i am going to start to make an entree that covers every issue and have that on hand any thoughts and ideas

Wow, one dish on hand? It would have to be a vegan dish that omits all eight major food allergies....sounds like a challenge!

Good plan for last minute requests. Just to CYA, you should include a disclaimer in your catering agreement that says you cannot be held responsible for requests made after the guarantee number is due. Assure your host you will do what you can, but explain to them that last second requests may only be fulfilled if they do not interfere with the planned production of the party. This puts the duty on the host to deal with any special requests.

 

This policy won't eliminate those special requests, or even slow them down, but it will dissuade any potential complaints by the only person that matters in a party, the host who is paying.
