hey i am a very keen catering student i am just about to leave school i have alreadu got a apprentaship but i was wondering what makes a good chef

Someone who cares.  If you care all other stuff falls into place.

1. Endless ethusiasm.
2. Knowledge of techniques and traditions.
3. Order. Order in your kitchen, your notes, your recipes, etc. Order is wealth.
4. A creative, non arrogant, attitude.
5. Most important: respect for the ingredients, or else:

Know how to not overcook food.

 

Know when and how to stop cooking food.

 

Know how to season in layers.

 

Know how to taste and adjust seasonings.

 

Know that you don't know everything.

 

Know how to learn new things.
