Anyone have any insight on this? Ways to do it? Need to make beer battered halibut in fast paced eatery. Don't want to waste product so thinking preparing and keeping it frozen would be good idea (?)

For quality sake make it daily and do not freeze. Unlike commercial factories you do not have flash freezers. Flavor and texture of fish is compromised. Make 30 or 40 orders in morning much better.

Chef Ed is right. You are getting a better product by making it fresh, as needed
