I have been cooking and running restaurants for ~15years, but now find myself with an opportunity to partner w/ a friend of mine who has just bought a sub shop (c/o and delivery). He has his hands in many different ventures and he will be doing all the monetary investing but needs someone with food-service expertise to actually run the shop. It is something I would like to take on as a change of pace.
I was thinking of doing it for a salary plus a percentage of sales. Unfortunately I have no idea what percentage I should ask for that would be fair to both of us. I was thinking of somewhere in the neighborhood of 5%, but that is really just an arbitrary number. Does anyone have an idea if there is a standard % for this kind of partnership?
