I also change the quantities (as I'm sure you do) depending on the potency of the ingredients. Sometimes for example I get cilantro that is very flavorful, other times it's kinda bland.
Oh I almost forgot!!! I also like to toast some coriander seeds and crush them in a mortar and pestle and add that to the marinade. I'm sure you can come up with more ideas for that marinade. I used to use scallions in there too but lately I've been back to just shallots. IMO the lemongrass should be the star.
PS: Just realizing that I also forgot to mention a few crushed garlic cloves and a bit of turmeric.
