Chicken picatta pizza?!?
I think done right it can be delicious.
I remember a while back I was at a friends house and they ordered a honey mustard pizza, and I thought what a gross combination...until I tasted it, and wow, it was incredible. Ever since then I'm a big believer that any pizza, done right, can rock.
I think it sounds like a good idea.
Probably best as a white pizza, and instead of tomato sauce use a typical 'piccata' sauce....lemon juice and wine, shallots, capers, mount with butter.
I'm assuming this is for in store service and not take out type pizza. Would be great on a flatbread...thin crispy, brick oven baked. Don't think it'd be so great on the typical pizza place pizza with the thicker crust that would soak up butter and oil.
If wanting tomato sauce I'd just do a puttanesca and add the piccata chicken. That would work on any pizza.
