My name is Andy and I'm currently working in France with three other co-owners of a restaurant, we are hoping to push the food to a lot more modern/molecular style of cooking.

Welcome, Andy! I see you're in a vacation area of southern France, an area to which I haven't yet traveled. I'll have to add it to my list. I'm a bit of a history buff and I know that's the ancient kingdom of Aquitaine. Someday....

 

You'll find plenty of knowledgeable people here with whom to discuss molecular cuisine and similar preparations. My husband and I, along with our founder Nicko and his wife once had dinner at Alinea, the Chicago restaurant owned by Grant Achatz. We ate there not long after it opened.
