Cooking for my girlfriend.... but I need some help!

Hi everyone!

 

I'm cooking for my girlfriend to do a fun thing for/with her. The "problem" is she's a health nut and also is gluten free. So she cannot do wheat and during the week she doesn't eat carbs. So that means she basically does protein, vegetables, olive oil and spices

 

Can anyone help me out big time and suggest any recipes that would be a fantastic meal for her? The ingredients don't matter and difficulty doesn't matter either.

 

 

I greatly appreciate it this help and I'll definitely take some pictures of the final product if there is interest!

Salmon and steamed asparagus.  Diced chicken, onion and peppers over a bed of spinach.

Fish, pan fry some fish (or chicken) in olive oil, lemon juice, garlic, and cayenne and serve over coconut rice ( just cook in a little over half coconut milk-water) incorporate fresh ginger and cilantro into the rice as well. Top it with a mango/strawberry salsa. She'll love you forever- I've never had a complaint and serve wheat intolerant/gluten free people frequently. You can serve it with a strawberry baby spinach salad too- through some nuts in for extra protein!

What about a Salmon Cesar Salad minus the anchovies of course. thumb.gif

 

Season the salmon with just a hint of salt and pepper because the flavor will be in the sauce.

What kind of protein does she like?  I would suggest doing a little tapas menu.  Fennel and octopus salad, steamed clams, some beautiful cheese and raw veggie platter.

Why on earth would you minus the anchovies??

You can never go wrong with a couple of well marbled ribeyes served medium with a watermelon and feta cheese salad. A little s & p, olive oil and balsamic vinegar on the salad. Perfect for a back yard bbq date night.

Old post, but I just noticed it and wanted to point out that cornmeal is gluten free. A lot of people don't realize that. This opens the door to breading (with eggs whites I'm guessing) and quickbreads. That adds a lot to a meal. Just saying.
